Avocado sandwich with beetroot hummus

For: 1 portion
1. Peel the avocado and cut lengthways into wedges. Wash and halve the cherry tomatoes. Roughly chop the pistachios.
2. Spread the hummus on the bread and place the avocado strips and cherry tomatoes on top. Sprinkle with the pistachios and garnish with the basil.
3. Season with salt and pepper and drizzle with some lime juice.
